had wonton soup for supper…

seemed like just the thing as I haven’t felt particularly hungry…

I’ve been eating yellow peppers and vitamin C throughout the day in an effort to stop a cold from giving me grief…

the only thing I’ve been feeling is tired… I slept for eight hours straight overnight, which is not my usual pattern, and was still tired all day…

made mashed potatoes for tomorrow’s supper to go along with a roasted chicken and some type of salad…

then took a few naps and read a bit…

a quiet and restful day…

simmered…

spent a good portion of the day in the kitchen… it smelled lovely the whole time…

pork hocks and cabbage slowly simmered all day long…

then I made garlic mashed potatoes mid day so that they had time to cool before being reheated…

and then it was supper time;-)…

all that simmering worked as the meat was fork tender and delicious;-)…

spent some time reorganizing the container area in the kitchen cupboards…

still trying to figure out the best system, lol… thought I had a perfect plan…

also made a few things in the Instant Pot… mashed potatoes worked well…

sadly, the pork hocks and cabbage didn’t turn out, but then I used the crockpot feature and got it done;-)…

more learning and experimenting required…

more birthday fun continued today…

once the boys woke up (after 8), we drove to the “A” for breakfast as it was chilly and rainy… the whole purpose of breakfast out was so we could walk, lol…

downtown for lunch and a Habitat for Humanity Garden Party and Fashion show…  

on to IKEA where I picked up two utensil holders… they were not the ones I really wanted but they will work fine… the last bit of red has now left the kitchen…

 

home to put the finishing touches on supper… all excited about the reheated mashed potatoes which will not affect my blood sugar the way freshly cooked ones do…

  

been looking forward to this dinner for over a week… our tradition is to have the birthday person choose their favourite meal and that is what we have… 

roasted chicken, mashed potatoes, gravy and stuffing are one of my favourite meals… haven’t had normal mashed potatoes since Christmas dinner because of the diabetes issues… 

usually you don’t have to make your own birthday supper and my son-in-law was really against me making the dinner, but it was what I wanted…

  

it was delicious and I certainly enjoyed every mouthful…

lots of eating today…

I wrote this post for work and thought I would share it with you…

Made me think of the service we received tonight at Lobby on York where the staff went out of their way to make the group dinner experience enjoyable for everyone who attended…

salmon with mashed potatoes and a lovely mustard sauce...

salmon with mashed potatoes and a lovely chipotle marinade…

they knew me by name when I arrived, and that I was the organizer… they took the list of what individuals had ordered and asked everyone’s name so they could provide the correct meal for the correct person…  it was another good customer service experience…  I am looking forward to doing something with them again…

that same kind of attention to detail happened on the Rhapsody of the Seas Cruise Ship… if you mentioned a problem with a meal or service, within minutes someone up the food chain would be at your table to hear the problem and then deal with it…  I had wanted a tour of the galley and was told there wasn’t any space left, but after mentioning it to one of the dinner service staff, it was all organized and a cookbook produced by the chefs was autographed and presented to me the next night when we arrived for our dinner…

really, it’s all about going the extra mile…
