was surprised when we got home from voting to discover a row of mushrooms along the edge of the lawn…

they have a number of names – got this from Wikipedia:

Coprinus comatus, commonly known as the shaggy ink cap, lawyer’s wig, or shaggy mane, is a common fungus often seen growing on lawns, along gravel roads and waste areas.

when they are new, they are these adorable little white cylinders… maybe where they got the lawyers’ wig name…

then they turn into these rather not-so-pretty versions… the shaggy ink cap…

no plans to eat them, lol…

Tuesday we went to aquasize as my buddy had an appointment on Thursday…

from there we drove to Oak Bluff, where we had lunch at Roxy’s Restaurant & Lounge… I was very excited to find battered mushrooms on the menu, so we started with those… and they were delicious;-)… then I had a tasty beef dip with Caesar salad… the service was excellent, the food good and it was a nice spot…

onward to Carman where we visited the Golden Prairie Arts Council to see an exhibition by Connie Bart Hamel which was filled with a variety of mediums… she is very talented and a neighbour of my friend…

we stopped at Syl’s for ice cream and had a lovely drive home in the sunshine…

wonderful day;-)…

one of my go to foods is chicken leg with back on, or leg and thigh as I call it…

last night I baked the chicken and warmed up some frozen mashed potatoes…

the treat was gravy with mushrooms and garlic…

I was pleased with both the gravy and the potatoes… it was the first time I had frozen and then thawed them…

this is going to be a game changer as I can now make a good size batch of mashed potatoes and freeze them in single meal sizes…

yum…

this morning I made a delicious cheesy omelette for breakfast…

shredded mushrooms and onion and fried them up…

then I beat up the eggs with my immersion blender… I use it nearly every single day…

it really whips them up…

then I poured that over the mushrooms and covered it with a lot of grated cheese… and some cilantro…

that went under the broiler for a few minutes and out came a delicious omelette… few final sprinkles of the cilantro and then it was time to devour it…

and I did… the cheesy gooeyness was just what I was craving…

have enjoyed a couple of lovely treats in the last few days…

while we were on our trip to and from Carberry we stopped at the Robin’s Nest Cafe where we picked up some delicious battered mushrooms…

today I took leftovers from our Saturday night dinner for my lunch… but one of my colleagues made me a toasted salmon sandwich with avocado and apple…

it is quite amazing how the simplest things can make your day…
