today I made a new and fancier version of scalloped potatoes… was a bit of fun…

made up packages for a friend and my grandson…. felt good to prepare food for others, lol…

also moved the rain barrel, swept off the back deck, put out the solar lights, and set up a few chairs…

my Easter dinner for tomorrow is basically ready… ham is cooked and I will just need to make some asparagus or Brussels sprouts… not sure which it will be…

currently, soup is simmering on the stove…

been busy in the kitchen…

I finally used the new steamer basket that I ordered from IKEA… it worked beautifully in the Instant Pot to hard boil some eggs…

it is an easy way to cook them and they always turn out great…

also made crackers from the Oh She Glows app on my phone… they are very tasty and do not have any flour in them…

this is the second time I’ve made them and they came out crisper as I thinned them out more than the first time…

yesterday I got my appointment for my COVID vaccination… woohoo… was thrilled as the age limit has been going down very slowly… arranged for my grandson to drive me there and back when the day arrives…

so, for a treat, I ordered from my favourite Vietnamese restaurant – Pho Hoang… we used to go there after our aquasize class… in the before time…

the food always arrives quickly and is delicious…

I usually try to order enough for a couple of meals, so got my favourite shrimp summer rolls with the steak and brisket pho… ate the rolls with some of the pho broth…

I also ordered some rolled ice cream, although I only ate a third of it with my dinner… it was delicious;-)…

had a big bowl of pho today… and maybe finished the ice cream;-)…

one of my go to foods is chicken leg with back on, or leg and thigh as I call it…

last night I baked the chicken and warmed up some frozen mashed potatoes…

the treat was gravy with mushrooms and garlic…

I was pleased with both the gravy and the potatoes… it was the first time I had frozen and then thawed them…

this is going to be a game changer as I can now make a good size batch of mashed potatoes and freeze them in single meal sizes…

busy day yesterday…

in the morning I attached the Philip’s lightstrip that I got for Christmas from my grandsons… I had played with it a bit the day before…

I am pleased with how it turned out…

moved around more plants and made a meal that needs to sit for a day…

after that I finished with making a dozen cards from the watercolour painting I’ve been doing…

felt very accomplished, lol…

on Sunday I took out a couple of little bacon wrapped steaks to barbecue, being as it was so warm out…

earlier in the day I baked a potato and then cooled it in the fridge so the sugars would be better…

moved Barbie into the middle of the garage and got her going…

the steaks cooked nicely and the potato warmed up just right…

I had a few Brussels sprouts which I cooked with garlic…

it turned out delicious… the steak was exactly the way I like it…

getting more used to using the barbecue…

there was a whirlwind of activity in the kitchen a few days ago…

not sure what it was about, but went with the flow, lol…

after breakfast, I used the leftover half banana to make some overnight oats…

a bit later I produced a small batch of homemade macaroni and cheese which I will have over the next few days…

then I prepared sweet potato oven fries to go with my pickerel for supper…

wonder if I will have this much energy over the next while, or whether it was a one time event…

had a bit of fun today decorating the house with hearts…

put them in the dining room, living room, bathroom, den and on the stairway…

I miss my beloved… he always made Valentine’s Day special, with flowers, treats and a delicious dinner…

I’ve been looking at meals from restaurants in an effort to support local, but they are all more food than I want, so I am planning on lobster ravioli with lobster sauce for my dinner with a salad…

should be fun;-)…
