now that I have access to the waffle maker, I keep wanting to make other things in it… and with the colder weather, I want warmer things to eat;-)…

I found a recipe online for an omelette, so I decided to give it a try…

it was simple, yay, which made me happy…

I did wonder about using three eggs, but decided that for this first time I would try to follow the directions, lol…

it had a breakfast sausage, but I just used half of it… it also called for red pepper, but I didn’t have any so used extra onion instead… and I used more or less the amount of cheese mentioned…

hmmmm, maybe I did change it quite a bit, oopsie…

as I poured the concoction into the waffle maker, I realized I had been right, two eggs would have been much better… there was some leaking at the edges…

it came out pretty good, but I think using less egg would have helped it cook better… so I am going to make it again tomorrow;-)…

the sky was absolutely amazing this morning…

I took these pictures between 6:07 and 7:15 am…

the sunrise was spectacular… on the drive downtown the sunlight was streaming through the clouds… not a single red light all the way to the office… and by the time I got there the clouds had filled the sky…

just before I left the office for the weekend, I got a photo of my amethysts… today we heard a designer talk about the importance of feeling good in your workspace and as I get used to my office I do enjoy all of the bits and pieces that make it mine and make me feel happy…

once I arrived home I took a picture of a piece of the Rice Krispie cake that my sweet colleague brought me this afternoon…

was so busy getting ready to leave the house early this morning that I forgot to take something out for dinner, but made a veggie omelette… it was tasty…

and now for a four day weekend;-)…

this morning I made a delicious cheesy omelette for breakfast…

shredded mushrooms and onion and fried them up…

then I beat up the eggs with my immersion blender… I use it nearly every single day…

it really whips them up…

then I poured that over the mushrooms and covered it with a lot of grated cheese… and some cilantro…

that went under the broiler for a few minutes and out came a delicious omelette… few final sprinkles of the cilantro and then it was time to devour it…

and I did… the cheesy gooeyness was just what I was craving…

have really taken the day to rest and recover from the cold I’ve been struggling with all week… 

these are some of the times when I most miss my beloved… he always did a great job of looking after me…

jammies on all day and the only thing I did was prepare meals…

for breakfast I really wanted to order something, but dragged myself down to the kitchen and took inspiration from the cute woman at the resort who made all the egg dishes… cooked up mushrooms, green onion and spinach and made an omelette with a little cheese in it as well… came out very nicely…

for lunch I chose the last bit of my zucchini basil chicken soup with chips and some Mexican chocolate… seemed like just the right combination, lol…

for supper made one of the ChefsPlate meals… still enjoying the process of preparing the meal… and it tasted great…

turkey and spinach meatballs…

as I was sitting in the living room waiting for the meatballs to finish cooking I could actually smell the hyacinth…

hurray, the cold is starting to let up…

another lovely day…

just a few photos of our activities…

started the morning with these great omelettes made in a sandwich bag placed in boiling water… didn’t take long and there was no mess… yay Pinterest…


prepared a picnic and headed to the beach for a wonderful afternoon… everyone made it into the water and enjoyed the waves and relaxing with books, the odd bit of Pokemon Go, or doing nothing, lol…

found a cool caterpillar which entertained all of us…

got a picture of the sky just after the eagle soared overhead…

found this tiny flower and had fun taking a few shots…

fit in a nap, and then found these…

reminded us of picking blueberries when we visited Uncle Bill and Aunty Vivian in Clearwater Bay…

supper cooked on the fire… looked tasty… and it was delicious…

this afternoon we picked up a fishing licence for me… was so excited that it was free because I am over 65…

after supper we went fishing…

while my daughter and I were casting, two Park Rangers came by to check us out… I said right away that I wanted a picture of me showing my licence to them… 

problem was it was in my wallet which I had left in my car at the campsite… luckily they believed me and we took a picture of me holding her licence, lol…

ending the evening sitting around the fire roasting marshmallows for s’mores as we watch the stars come out…
